Diana’s Easy Sausage, Peppers and Onions

Diana’s Easy Sausage, Peppers and Onions

Ingredients:

2 lbs. Italian sausage - sweet, mild or hot

6 - peppers, seeded and sliced.  I use 2-red, 2-orange and 2-yellow because I like those best but you can use green too.

2 - sweet onions, sliced. I use vidalia.

Olive oil for cooking.

Good Italian rolls if you are making sandwiches.

Cooked rice or polenta if you’d like to serve the sausage, peppers and onions on top.

 

Directions:

First wash, seed and slice the peppers and onions.  Put them in a 13 X 9 baking pan and drizzle with olive oil.  Toss well to coat then place in a 350 degree oven while you begin to cook the sausage.  Checking about every 15/20 minutes to stir the mixture.

 

I partially cook the sausage before slicing as it is easier to cut the slices that way.  Using the tip of a sharp knife I pierce the sausage links about 3/4 times on both sides.  Then place them in a fry pan on medium high heat to start to cook. When they turn brown, flip each piece over to cook on the other side.  Once they are browned on both sides remove and slice pieces on an angle about 3/8” thick*.  Continue to cook all the slices until browned.  Check on the peppers and onions again and stir.

 

When sausage is cooked drain all the excess oil and add to the pan in the oven with the peppers and onions.  Continue cooking and stirring until all ingredients are cooked through and the peppers and onions are soft. Season with salt and pepper to taste.  Can be served on a good Italian roll in a sandwich with a slice of provolone cheese or served over rice or polenta.  So tasty!!!
